Am seeking a brunch recipe for halved hard cooked eggs baked in a cream cheese type sauce-originally named(seacoast town) ______eggs.

In the microwave in a small microwave safe bowl, place a tablespoon of chopped red or green sweet pepper (or both), a tablespoon of finely chopped onion and one tsp canola oil. Nuke covered for about 30 secs, or until soft.

Make a basic cream sauce and when thickened, add two sliced hard boiled eggs and the pepper and onion mix to the sauce.

Serve over toast points or "sippets".

I also like to add the following to make variations. A dash of curry powder to the sauce or, a dash of Italian seasoning... some crumbled bacon or sausage. a dash of hot sauce... but not all items at once. Serves 2.

OR-

  • 2 tbsps butter
  • 8 eggs
  • salt & pepper to taste
  • 2 tbsps all-purpose flour
  • 1/4 c grated Parmesan cheese
  • 1 c milk


Directions

  • Step #1 Place eggs in a saucepan & cover with cold water.
  • Step #2 Bring water to a boil & as soon as possible remove this from heat.
  • Step #3 Cover & let eggs stand in hot water for 10 to 12 mins.
  • Step #4 Remove from hot water, cool, peel & chop.
  • Step #5 Melt butter in a small saucepan over med-heat/flame.
  • Step #6 Whisk in flour; when thoroughly mixed, slowly add milk, stirring constantly.
  • Step #7 Cook until thickened.
  • Step #8 Stir in cheese.
  • Step #9 Pour sauce over sliced, boiled eggs.
  • Step #10 .
