Questions on baking a Cheesecake

I have a great recipe for "Creamy Lemon-Ricotta Cheesecake" & i have several questions.  1. can i subsitute Mascapone cheese for the Phila. cream cheese or leave it alone?  &  2. why do i wrap the outside of the pan with foil?  Do i keep the foil on while baking & when do i take it off?  3.  what is the purpose of the foil wrapped on the outside?

1. Yes you can, just note that fatter cheese will get you better results.

2&3. Cheese cakes usually demand long baking time, and you really don't want it to come out dry. So, in order to prevent a direct exposure to the extreme heat, you should cover it from the outside with a foil. You shouldn't remove till the end of the baking.
