Preventing a rubbery chicken cutlets

how do i keep chicken cutlets from gettin herd and rubbery when grilling , frying or pot roasting?

what do resturants and caterings do to keep the chicken cutlets moist?

I think that you might be over cooking the chicken. It should be cooked to an internal temperature of 165 for 15 seconds.

Often times, rubbery and hard chicken is due to OVER COOKING!  Chicken takes very little time as compared to red meat so that may be the problem.  If following a recipe, go by the time stated (usually a few minutes each side or until juices are clear).  Also, allow chicken to rest before slicing into - you lose moisture by cutting into Hot meat.

I agree with the other responses and would add that on a grill you must allow for very high heat (which will shorten cooking time). Adding a crumb crust may also help retain juices. For the juciest ever, investigate "brining" (a soak in salted and sometimes flavored water before baking or grilling). Since pot roasting means long slow cooking, I don't recommend it for cutlets. They are thinner than a breast and will cook much faster. Experiment by cutting your current cooking time in half -- then cut into the center of a cutlet to see the color. You want the pink/flesh color to be closer to white. If it isn't, cook it a bit longer and check again.

By chicken cutlet, I am assuming that it is a boneless chicken breast.  I always make sure that they are the same thickness by putting them in a plastic bag and flatten them, this not only makes sure of them all cooking at the same rate, but it also breaks down the fiber  slightly. I then dust them with flour, shaking and patting them to get off all excess. Then cook them over a medium heat until they are just done and slightly browned.
