Makes 4 servings (3 poppers each)Ingredients
No-Stick Cooking Spray2/3 cup cake flour1/2 teaspoon baking powder1/8 teaspoon kosher salt1/2 cup BEATIN EGG2 tablespoons milk2 tablespoons finely chopped fresh jalapeno pepper I USE JAR MILD ONES1/2 cup shredded reduced fat Cheddar cheese
Directions Preheat oven to 425°F. Spray 12 mini muffin cups with cooking spray; set aside.Combine cake flour, baking powder and salt in medium bowl; set aside. In second bowl, combine Egg Beaters, milk and jalapeno pepper.Pour Egg Beaters mixture into flour mixture; mix just until moistened. Stir in cheese.Spoon batter evenly into prepared muffin cups. Bake 8 to 10 minutes or until wooden pick inserted in center of popper comes out clean. Serve warm. Cook's Tips Cake flour is recommended to give poppers the best texture. If you do not have cake flour on hand, all-purpose flour can be substituted.A mini scoop can be used to fill each mini muffin cup.
