2/3 cup cake flour
1/2 teaspoon baking powder
1/8 teaspoon kosher salt
1/2 cup BEATIN EGG
2 tablespoons  milk
2 tablespoons finely chopped fresh jalapeno pepper
          I USE JAR MILD ONES
1/2 cup shredded reduced fat Cheddar cheese

Spoon batter evenly into prepared muffin cups. Bake 8 to 10 minutes or until wooden pick inserted in center of popper comes out clean. Serve warm.

Cook's Tips
Cake flour is recommended to give poppers the best texture. If you do not have cake flour on hand, all-purpose flour can be substituted.A mini scoop can be used to fill each mini muffin cup.

Thank you Nanadee, sounds gooooooood! Can't wait to try them! And easy, I like EASY!!! Quick and easy, the best of both worlds! Bet my granddaughters will love them too. And the best part is, it uses ingredients I always have on hand. Those are the best kind of recipes, where you always have it and don't have to run to the store for special ingredients. Thanks again!!
