What is the easiest way to peel tomatos?

Life's too short for excessive compromise... maximize everything!

Assuming that the purpose of peeling the tomato is for eventual cooking, I have found great success with freezing fresh tomatoes and then defrosting them.  As the tomato defrost the skins virtually "fall off"!

I use zip lock bags and remove as much air as possible.

Try boiling the tomatoes in a microwave dipped in normal water.

Then strain them out and drop them in water filled with ice cubes.

The skin generally comes out in two halves.

The best way I have found to peel tomatoes is to blanch them quickly. Simply boil a pot of water and pour over tomatoes. Let sit for a few minutes. When you take the tomatoes out, the skin should slide right off. This works for peaches and any other fruit that you need to skin too!

I drop the tomatos in very hot water for a few minutes. When removed and cooled under cold water the skin almost comes off itself.
