Can I monitor children's activities and chat in real time on wifi home network? How can you share the desktop without them knowing since they would be cautious if they knew i was watching them?

One thing you can do is set their computer up to log all chats (which it may already) and just give your other computer access to share the files and logs. You can review and reference them any time.
I'd be careful though, taking away freedoms such as this behind their back can lead to a major rebellions, insecurity, paranoia, and flat out anger @ you if they find out.
If you feel there's a problem, the child would probably feel much more respected as an individual if you approached and asked/discussed it instead.
