Yes, you can, but you need to use a third party application like copytrans to do this. It's very simple. You only need to download this app, connect your ipod, select the music you want to copy to your new ipod, and click on the "backup to itunes" or "backup to folder" button. This will immediatelly add your music to iTunes or to your PC. Your music is back! This video will show you how

If all songs are on your iTunes library. you can simply plug your new iPod in and sync. If those songs are only on your old iPod, simply use an iPod music to computer transfer program to help you get all songs/videos back to your iTunes. Then you can sync smoothly.
