I Need Moist Cake!

How can I make a moist cake by scratch, and still have it raise nice and high?

Oooh, now I get it..

Most cake recipes include oil and eggs. Both of these provide some moisture. One of the moistest cakes I've ever made used mayonnaise. Shocking but true! Go to Best foods.com and type in chocolate cake, it will be in the list as Chocolate Mayonnaise Cake. Cakes with fruit in the recipe also have a lasting moistness. To get a cake to rise properly make sure you measure all ingredients and that the oven is truely coming to the temperature specified.

If you add 1 cup of Sour Cream to most any batter it will make it real moist without tasting the sour cream.

If you bring all y our ingredients such as eggs, butter, shortening, and milk to room temperature you will see a big difference in your recipes. I usually leave my eggs and butter out at least 2 day prior to actually making my cakes. Try it you will really see a difference in the height and texture of your cakes.
