Why does Milk Chocolate make me cough so hard that I feel like I have to drink as much water as possible to clean out my throat? I do not have these coughing spells when I eat Dark Chocolate, why?
Sounds like to Dairy allergy to me. Dark chocolate doesn't contains milk, that's why you only cough when you eat milk chocolate.
Do you have the same spells when you eat other milk products?
There is a known phenomena of having a hyper sensitivity towards milk. If you find yourself in a similar situation with other milk products it may be that. If not there might be something else special to milk chocolate that you're allergic to. The cough you experienced is a common allergic reaction.

I've actually never heard of such a thing! I'm so sorry you have that problem with milk chocolate! It's my favorite sweet of all time!
