You can change one window to the format you want, then open folder option, view tab and select to apply the current setting to all folders. This will not impact folders that are already open, but should take effect for all folders you open from that point on.
I would also suggest removing the folder option 'Remember each folder's view settings' if you want all folders to have the same look and feel.
