Keeping chocolate coating solid

I was thinking about preparing chocolate coated coffee beans, but have no clue on how to keep the chocolate solid without being kept in the refrigerator.

Any tips or tricks?

Dealing with chocolate is no easy task. Don't forget

Tempering which is the correct way to melt chocolate.The thing is the minute the temperature drops from 29 c you will have to re-temper it. The chocolate is very sensitive to moisture , be careful if your coffee beans are moist. If you are looking for a fast way to cool the chocolate for a short term try the outdoor weather or just lay an aluminum tray on a pile of ice of even cool water it will cool the surface and harden the chocolate. I don't have any solutions for long term.

here is an easier way, take a good plastic, microwave safe bowl and melt chocolate in  it for intervals  of 30 seconds be VERY careful not to burn it.  when it is fully melted add small amounts of chocolate to the bowl stirring until fully desolved. keep adding more chocolate until it no longer dissolves quickly. take a small amount and drizzle it an wax paper, it should dry in 3-5 mins without turning white or streaky when it does tthis it is ready to be used for dipping
