Here is a recipe a friend of mine gave me.
1 cucumber
Cream cheese
4 tablespoons imitation crab meat
1 avocado
Ponzu sauce:
4 tablespoons rice vinegar
2 tablespoons Lite Soy sauce
1 tablespoon lemon juice
Directions
Peel cucumber and throw away skin. Lay rest of cucumber out like paper. Spread thin strip of cream cheese, and add crab meat and avocado. Roll cucumber back up and cut into bite-size pieces. For Ponzu sauce, mix rice vinegar, soy sauce and lemon juice, and drizzle over sushi. Best served with soy sauce and wasabi.
Kitchen tip
Peeling a cucumber is similar to peeling an apple. Only slice it with a knife on the down stroke.
