First of all, from what you said, you don't want statistics software. That class of programs is for statistical testing of scientific data or data of some other form. A statistical test tells you something about whether any differences or correlations fall within some levels of probability. There may be some charts generated, but changing the data after the fact (interactively) violates every principle of statistical theory.
I think what you're asking for is visualization software... sometimes called graphing software or charting software (although the latter has a more focussed definitiion for investors).

I've had no connection with that company, nor have I tried their products, but they have demos and free trials. It appears that at least one of their products generates Flash output.
If that doesn't suit you, try a Google search using "data visualization software". You'll get lots of results.
A low-end solution may be to use the charting capabilities of Microsoft Excel or Powerpoint. In both cases, changing the numbers in your data table will change the charts you generate.
