Hummus, when left outside the refrigirator, will get sour. This is surprising because it contains no meat or milk.
Could be the acid in the lemon juice.

It could be containing creme fraiche, if not it often contains beans of some kind, and liquid, like lemon juice for instance, sometimes onions, mushrooms, etc. Souring is due to chemical reactions when those substances start decomposing.

There is one type of hummus (Syrian style) that contains yogurt, and others that contain tehina (sesame sauce), which can cause it to turn sour.
