It depends on where you are planning to stay in London. The Stansted Express train service heads into Liverpool Street station (east London), whereas the Gatwick Express train service heads into London Victoria station (west London).

I would rule out Luton public transport-wise, as from there you need to take a shuttle bus and then a commuter train service run by First Capital Connect.
