Heavy cream has a fat content of 30 to 40%,some as high as 42%. It's know also as whipping cream. Light whipping cream is 30 to 36% and heavy is 36 to 40%.
heavy cream (and whipping cream) contain 36 to 40 % milkk fat. If you are following a baking recipe or whipping, it is important to use the heavy cream. However, if your recipie is for a soup or sauce, you can substitute an equal amount of evaporated milk instead.

In the milk department at your grocery store you can buy "whipping cream" and that will be "heavy cream" You can also use "half and half" for some recipes that call for heavy cream. It simply means "not milk" the heaviest cream will make the recipe richer and better than trying to use milk.
