What is the ideal fat% you want use when cooking a ground beef hamburger?

Ground beef, in its old fashioned regular form, is 73/27:  a bit high in fat for today's more health concious consumer  i think 80/20 is a happy medium, with 85/15 pushing the limit on flavor.  It takes a bit of fat to make a tasty burger, and the "ground sirloin" is best left to meat sauce, meat loaf etc where other flavors compliment the beef.  If you want low fat, try lean ground turkey.  The key is lean, because some ground turkey has more fat than ground beef.

Everything I say can be fully substantiated by my own opinion.

It can depend on how you're cooking it.  85-15% is good for stovetop cooking, but if you're using a smoker or grill, you might want to use 80-20% to avoid ending up with "hockey pucks".

7% fat. Just remember to keep it moist you want to only flip one time over turning will dry the meat and leave it tough.

The best % is 80. This ratio will keep the hamburgers moist. I know this from experience.

 

 

 

 

 

The best ratio is 80/20. This keeps the hamburgers moist. I know this from experience. I've used a less fat combination and my burgers were  dry and a lot less tastier.
