Ground beef, in its old fashioned regular form, is 73/27: a bit high in fat for today's more health concious consumer i think 80/20 is a happy medium, with 85/15 pushing the limit on flavor. It takes a bit of fat to make a tasty burger, and the "ground sirloin" is best left to meat sauce, meat loaf etc where other flavors compliment the beef. If you want low fat, try lean ground turkey. The key is lean, because some ground turkey has more fat than ground beef.
