Here's the secret: They're fried twice. Get some good Idaho baking potatoes, peel them and slice them just like BK fries. Heat your oil to around 325ºF and fry them until they just start to turn brown. Remove them and allow them to cool. Then refry them until they are golden brown. Sprinkle with salt and enjoy.
Anothet trick you might want to try is to make a solution of white vinegar, salt and water (3 cups water, 1 cup vinegar and 4 tablespoons of salt), and soak the potatoes for 30 minutes. Drain and pat dry with paper towels and fry as above. Even better!!
