Fresh Ham

Each year I look for a fresh ham...not many people even know what a fresh ham is. Does anyone out there cook one?

It is an uncured ham. Cooking one is still pretty basic and hard to mess up. The simple guidlines are to cook it at 325 degrees for 18 to 20 minutes a pound. Always be sure the internal temperature is a minimum of 160 degrees. You can season in any manner you prefer.

My method is to rub with brown sugar, then coat with honey and then top off and rub into the honey and brown sugar a can of crushed pineapple.

Hi Ken,

Yes, I make fresh ham about once per year. Mostly because it is quite large, so it would mean having to invite people to help eat it :-)

When I make it, I cook it all day long practically, on a very low temp. My favorite spices are not the sweet, but herbs and garlic and so on. Ill write out a recipe if you like. It is a good choice for the holidays, different from the norm.

Ham is one of my favorite meats to cook, and of course, to devour. For Christmas Eve, I served fresh ham to my family with an old family recipe, but I haven't cooked it or even carved ham in years, but with some practice I was right back in it.
