I freeze EVERYTHING.  Although I haven't made chicken lasagna rolls ups.. I have frozen chicken chili and spinach manicotti.  Both were fine when they got reheated.  I say GO FOR IT!

i not sure about your recipe style but yes. if it is in a pan and saucy,i would put a piece of parchment paper directly on the surface then seal tightly with plastic wrap. if you wanted to freeze pinwheels "pre sauce" i would make them and roll them in parcement before wrapping tightly in plastic or in a zipper bag. this would be great for individual portions. either way the less air to surface, the better. good luck!

Thanks for taking the time to answer. I will give it a try. Just trying to simplify the day on Christmas by not having to spend too much time in the kitchen.

yes, but make certain they are sealed tightly against freezer burn, and you shouldn't re-freeze the cooked lasagna. When you cook them and they haven't been defrosted, you need to add some cooking time (think about all of the frozen entres in the freezer section at the supermarket).

Also, depending on the ingredients, the texture may suffer. If you have a lot of vegetables, some of them may suffer. Tomato sauce will be OK but tomato chunks will become sauce.

If you are using frozen vegetables instead of fresh it isn't advisable to refreeze the vegetables, so it wouldn't be advisable to freeze the lasagna if containing pre frozen veggies.
