Blackeyed peas (aka field peas), natch. And mushrooms. Sauteed in a bit of butter, yum! Oh, and artichokes of course. Greens (any kind), corn, lima beans (succotash!). And tomatoes. Fresh tomato tart made with puff pastry, Dijon mustard, diced shallots and Gruyere cheese - yum!<p>
Ok, so I like most veggies. Except eggplant; I'm not too crazy about eggplant. And okra; I DESPISE okra, it's the vegetable equivalent of oysters on the half shell...
I'm in on the horseradish. Anyone ever made horseradish mashed potatoes? Quite good, but next time I'll add more horseradish!
