How do I make "baked chocolate pudding cake"? Also ...

How do I make "baked chocolate pudding cake"?
What's the best chocolate/cocoa to use for this?

Most importantly: is it possible to use individual ramicans for this? 

I'm seeing a lot of recipes mentioning adding instant coffee to the boiling water part of the recipe. Some recipes even calling for eschewing the water in favor of half and half in order to make the sauce have greater body. Others mention using eggs...

Life is short. Eat dessert first.

Here's what I use:

1 sq. unsweetened chocolate (melted)
2 tbsp. melted butter
3/4 c. sugar
1/4 tsp. salt
1 tsp. vanilla
1 c. enriched flour
2 tsp. baking powder
1/2 c. milk

Topping:
1/2 c. granulated sugar
4 tbsp. cocoa
1/2 c. brown sugar

Combine chocolate, butter, sugar, salt and vanilla in saucepan in which chocolate was melted. Add sifted dry ingredients alternately with milk. Pour into 8 inch round greased pan and top with topping ingredients mixed together. Pour over 1 cup water. Bake in a 350 degree oven for 40 minutes. During baking this separates into cake on top of chocolate pudding sauce. Serve while warm with whipped cream or plain.

Thank you for your response! May I further ask:

1) Do you use dutch cocoa or regular? One type reacts to baking powder and the other doesnt...
2) How high does this "pudding cake" rise? I'm thinking of using ramicans...
3) Would you recommend making this in individual ramicans?

In answer to your question, I used regular cocoa. I'm not sure I know what a ramican is (or at least I've never heard this word).

Here's a recipe that works well for ramikens...I haven't made it, but it's from the Cook's Illustrated folks, and I trust their recipes implicitly.
