Eating vegetables by their color

I heard that there is a great significance for eating vegetables by their colors. How many colors is it recommended to eat per day? What's the rational behind this rule?

It is recommended to eat 5 colors a day. 

Scientists discovered that vegetables of the same color share common compounds such a vitamins and minerals, so in order to get the best nutritious value for your body you have to vary the colors you eat.

You should be eating 5 colors of vegetables per day:

  • Green - leafy vegetables such as spinach and lettuce
  • Orange - carrots, pumpkin
  • Red - tomatoes etc
  • White - Leeks, mushrooms, sprouts
  • Blue / purple - Purple cabbage

The reason for this is that as we breathe we create something called free radicals in our body. The way to counteract those free radicals is via eating anti-oxidants. 

Each of the above food colors are that way because they each have different anti-oxidant properties, the richer their color, the higher in the anti-oxidant properties . In addition, they all have the necessary vitamins we need on a daily basis
