You should be eating 5 colors of vegetables per day:
- Green - leafy vegetables such as spinach and lettuce
- Orange - carrots, pumpkin
- Red - tomatoes etc
- White - Leeks, mushrooms, sprouts
- Blue / purple - Purple cabbage
The reason for this is that as we breathe we create something called free radicals in our body. The way to counteract those free radicals is via eating anti-oxidants.
Each of the above food colors are that way because they each have different anti-oxidant properties, the richer their color, the higher in the anti-oxidant properties . In addition, they all have the necessary vitamins we need on a daily basis
