Dry Food Storage

I have some dry food such as peas and beans flour, chilli powder and some spieces from a country that grows these items without preservatives and processing chemicals. How long I can keep them, Can I store them in food cupboard. If not, where should I store them? In a freezer? For how long? Please advise. Many thanks.

I think the best way to preserve these items is to put them in the freezer, but it's hard to know how long they will stay good.  When you want to use the items, take them out and just smell and try a small bit to see if it looks ok.  There's no other way of knowing really, unless there's an expiration date.

Storing Flour:  

You can store any kind of flour by sealing it into bags (I use a small kitchen garbage bag), freezing at 0 F for 4 days, then storing it on a shelf or closet...it will keep at least several years this way.

Storing Spices: 


  • Store spices in a cool, dark place. Humidity, light and heat will cause herbs and spices to lose their flavor more quickly. Although the most convenient place for your spice rack may be above your stove, moving your spices to a different location may keep them fresh longer.
     
  • As a general rule, herbs and ground spices will retain their best flavors for a year. Whole spices may last for 3 to 5 years. Proper storage should result in longer freshness times. 
     
  • When possible, grind whole spices in a grinder or mortar & pestle just prior to using. Toasting or Dry roasting whole spices in a dry skillet over medium heat before grinding will bring out even more flavor. 
     
  • Because the refrigerator is a rather humid environment, storing herbs and spices there is not recommended. To keep larger quantities of spices fresh, store them in the freezer in tightly sealed containers.

Peas,bean, and any kind of grain will last a year or longer if you put them in ziplock bags and set back in a dark pantry or on a shelf away from moisture, The best things for spices I've found are the ''merry go round'' spice holders with individual glass bottles.You can put spices in them,label, and set the holder where it will be away from the heat of the stove, they will also last a year or so if the lids are kept tight. Flour can go in the freezer indefinetly..
