Once I have initially stabled the humidor should I remove the distilled water? Or should distilled water always be in the humidor?
When you get to the 70 range it is safe to remove the water. You have to check the relative humidity weekly , and maintain it at a proper moisture level.

It is very important to always keep the humidifier with distilled water in the humidor. The water will dissipate as you open and close the humidor to take cigars out or to put them in. Never remove the distilled water humidifier from the humidor.
