Deep frying with olive oil

I know for a fact that olive oil is better for you than other brands of oil. Can I use it to deep fry, say, french fries?

Cooking with high heat does not change the basic properties of olive oil, but it causes olive oil to lose some of its flavor. Because of this, it may be best to use expensive, flavorful, extra virgin olive oil for dishes that are not cooked or as a last minute addition to cooked dishes just before serving.

I agree with Occam that you probably want to use olive oil of good quality if you want to try it for deep frying. The lower quality olive oils have low smoke temperature so they start somking at a low temeratrure (lower than what you want for deep frying). And that smells BAD Laughing

I actaully never heard about anyone who makes fries with olive oil and I don't think I'd like to try that. I don't like the taste.

No. If your worried about what is better for you why are you making fries? If you want healthier fries try the dry fry method where you bake them in the oven.

I deep fry all of my deep-fry foods in olive-oil.  It tastes very good, although I'm researching if if its better for me than, say, deep frying in other readily available oils.  This includes french fries, fried shrimp, chicken strips, etc.

Does olive oil lose its health benefits when heated to deep fryin temps?  It certainly doesn't smoke.

You should try peanut oil. You can heat peanut oil to 375F without failure. Try this for your next fries: heat oil to 375F and in SMALL batches (a handful at a time) fry for 2 minutes, remove pat dry and cover and put into the fridge until cool. Return to heat and fry until golden brown. Tender inside and crispy outside=GOURMET, BABY!

According to this article, you can.  Just keep the maximum cooking temperature to 355 degrees Fahrenheit.  Coconut oil tastes good, but I heard that it's not very healthy to eat.  http://spanishfood.about.com/od/cookingtipsandbasics/a/tipsoliveoil.htm
