I would suggest to first use DVDShrink (the site is down, for some reason, so try again later). This will allow you to remove unnecessary tracks (such as various audio tracks in other langauges and translations).

You can then use VirtualDub to extract the video and audio and re-encode them (I suggest DivX for the video and MP3 for the audio).
