I like to slow cook roast in a crock pot.  you can also do it in a roasting pan in the oven.  I always add my liquid and vegitables (carrot, celery, onion, potatoe... maybe a little garlic etc.) and cover and cook .  the important thing is internal temperature.  You need a meat thermometer and look for about 165 to 180 internal temp.  Or, if you have no thermometer.. wait until you can twist a fork in the meat and it easily shreds.
