I made a conserve but cooked it too long. How can I correct for this?

Yell Early bird gets the worm,but the second mouse gets the cheese

depending on what kind of fruit you used you can strain out the over cooked fruit and replace it with new par cooked fruit or get creative  and add a different fruit to the jelly. like if you over cooked black berrys  add sweet peaches infusions are very common now days.
