Chocolate ganache

whenever i make chocolate ganache it always has a beautiful shine to it,  until it cools.  then it has a dull finish.  what is the secret?

Are you letting the cake cool before you are covering it with the ganache? Make sure the cake is cold before covering with the ganache. This will ensure that the ganache does not dull when stored in the refrigerator.

Alice Medrich, a leader in the baking field has an excellent recipe for a shiny ganache.  I have used it many times and it is excellent.

Do a search for Alice Medrich's Shiny Chocolate Ganache and you should be able to find it.
