GIVE a man a fish and you feed him for a day. TEACH a man to fish and you feed him for a lifetime.

SADLY, most fishermen are afraid to touch the worm.

I use a long, thin bread knife and gentle "saw" across the bottom of the pan and the cheesecake. Then you can slide the cake off the bottom of your spring pan

Since I have started my business, I had bought the two piece pans.  Not like a springform.  The bottom is separate and sits in the pan.  But with either pan, you can buy a spray from Wilton (the cake people) and spray lightly the side and the bottom of the pans.  Cut out a piece of parchment paper to fit the bottom then put it in and put your crust on top. Bake or whatever it calls for then put the filling in. After baking for the New York style I let them cool and put in the fridge for 4 hours or overnight, then gently losen the sides with a small spatula knife and the remove the pan from the cake.  Use the same type of spatula to loosen the bottom from the cake.  If the parchment paper sticks to the bottom of the crust. Invert the cake  with a piece of parchment on the top of the cake to prevent sticking and then peel the bottom piece off.  This also goes for the springform pan. Undoe the side and follow the same procedure to take the bottom paper off. I don't like sending it out the door with that piece on the bottom, because it makes it hard to cut at the party.Or you can do what the person below suggeted.
