I would like to own and operate a multi-variety cheese factory...What do I need to get started? Where in the U.S. should I build this business to insure its success? (I was considering WI since it is a dairy state).

You need access to a dairy farm to supply you with milk from cows and goats and sheep. You need to live in a cold climate. And you need a lot of patience. You need to be able to work almost constantly and find that the public does not understand the elegence of your product. You need to find satisfaction in working pretty much alone. Your cheese factory should be located near wineries.
Dear NJoy,
Ahhh yes, I didn't think of having it near a winery. Love that idea!
Thank you,
