"Central Air" is just regular air conditioning? Right?

"central air" just means the house has a single air handler... right...?

That is correct. Although large houses could have 2 units or more.

And from my own experience. Run air at sunrise on days with dewpoint over 60 degrees. Run the AC long enough to lower the humidity. Sunrise has some of the coolest air and the highest dewpoint.
