I've never seen any but the HARD candied red and the brown carmel which are soft. I looked through RecipeZar and they have not one soft candided apple recipe.

You may need to return to your "Source" because the ones that are hard and red are called candied because, just like making lollipops the ingredients are boiled to the "hard crackle point".  Whoever you saw make them must have used there own inventiveness
