I found this in a search. It is supposed to be a Bob Evans clone.

BANANA NUT BREAD

1/2 cup shortening

1 cup sugar

2 eggs

11/2 cups flour

1 teaspoon baking soda

1/2 teaspoon salt

3 or 4 very ripe bananas, mashed (use 4 if bananas are small)

1/2 cup walnuts, optional

Preheat the oven to 375 degrees. With an electric mixer, mix shortening and sugar. Add eggs one at a time. In another bowl mix together the flour, baking soda, salt and bananas. Add to egg mixture. Add nuts and mix. Spoon batter into a greased 9-by-5-by-3-inch loaf pan. Bake for 30 to 40 minutes or until tested done.

I found this one said to be similar to Bob Evan's recipe. YOGURT BANANA BREAD 1/2 cup butter or margarine, room temperature 1 cup sugar 2 eggs 1 teaspoon vanilla extract 1 1/2 cups flour 1 teaspoon baking soda 1/2 teaspoon salt 1 cup mashed bananas 1/2 cup vanilla yogurt Cream the butter and sugar. Add eggs and vanilla. Add dry ingredients; mix well. Add bananas and yogurt. Bake in a greased loaf pan at 350 degrees F for 1 hour.
