I need an idea for a tasty and easy made appetizers, to be served when my friends are coming in a short notice.

If you need something really fast (because they are coming...) I advise you to buy nachos and make great sauces (like guaqamuli ans tomato salsa).

Chicken Satay (serves 2-3)

  • Garlic cloves – 4
  • Chilies – 2
  • Coconut Milk – 1/ 2 cup
  • Turmeric powder – ¼ tablespoon
  • Sugar – ¼ tablespoon
  • Fish Sauce - 2/3-table spoon
  • Chicken – thinly sliced
  • Bamboo sticks / skewers

Puree the coconut milk, turmeric, sugar, garlic, chilies and fish sauce. Put the chicken on skewers and marinate in shallow dish for 1 night.

Broil for 30 minutes before serving.  Turning the chicken half way through. .Put more of the marinade over the meat if the meat looks too dry. Serve with Peanut sauce

Peanut Sauce

Mix 1 cup coconut milk with 3 tablespoons chunky peanut butter, 1 teaspoon Sugar, 2 teaspoons lemon juice and 1-teaspoon fish sauce

Quick Asian Dip
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tablespoons soy sauce
  • 2 tablespoons chopped fresh basil
  • 1 Green Onion, chopped
  •  1 tablespoon rice vinegar
  • 1 teaspoon minced fresh ginger
  • 1/2-teaspoon sugar
  • 1 teaspoon Chile Paste W/ Garlic

Assorted cut-up vegetables (such as carrots, red bell peppers, cucumbers and broccoli)

Combine first 11 ingredients in small bowl; whisk to blend. Season dip with salt and pepper. (Can be prepared 1 day ahead. Cover and refrigerate.) Place bowl with dip in center of platter. Surround with assorted vegetables and serve.

 

 

Spicy Chicken Wings (serves 2-3)

1 1/2 pounds of chicken wings

marinade

  • 1-tablespoon fish sauce
  • 1-teaspoon sugar
  • 1 thinly sliced and pounded lemon grass stalk
  • 10 cloves garlic crushed
  • 2-5 chopped Thai chilies (depending how spicy you want it)
  • chopped cilantro leaves and pounded cilantro root
  • ¼ cup whisky (Rum or Bourbon)

Mix the marinade, stir the wings until thoroughly coated and leave to in the fridge over night.

When ready to bake the wings, preheat the oven to 400 degrees F (200 degrees C). Place the wings on a baking tray and bake for 20 minutes, turning them half way through. Wings are done when they look shiny, golden brown and have a bit of a crispy edge around them. Serve with your favorite hot sauce. Garnish with lime wedges and cilantro if desired.

This is then served with a dipping sauce.

Dipping Sauce
Use the (bottled) Thai Sweet-Hot Chili Sauce. Add lemon juice, a tablespoon of fish sauce and chopped cilantro.

Tomatoes and mozzarella:

slice the tomatoes

place them nicely on a tray 

place mozzarella slices on top

cover them up with olive oil

add Basil 

easy any tasty
