Since the Amana community is German I would think that the pancakes would contain some whole grain (probably wheat) flour. Do not use this excusively. I tried it and wound up giving the pancakes to a friend that was into shooting skeet. Go easy on the oil. Add a little baking powder. About one egg per cup of flour sounds right. (I have never tried this, but you might want to separate the eggs and beat the whites up into a meringue-like state and fold it into the mix). And don't over mix the batter. It is just fine if there are some little lumps in it. Gooking will take care of it. Pecan meal is a wonderful addition to pancakes. Cook on cast iron or heavy aluminum. Turn when they are brown on bottom.
Here is a question. What is the biggest difference between carpentry and cooking. And the answer is- measurement is critical in carpentry.
Don't panic if you go thru several iterations. You will get there. I would start out by looking at several pancake recipes. When you are comfortable with basic concepts, like they say at Indy, "Start your engines", or was that, "Turn on your stoves".
