Any trick that works for stop smoking will work for stop chewing (aside of maybe the electronic cigarettes).
Don't do it alone! find other people who want to quite (either cigarettes or chewing) pick a date together and contact each other daily to see how you did. I know that for my parents and aunt that worked really well. No one wanted ot be the first to break and ruin it for everyone else.
I suggest giving a shot to the nicotine gum, it helped both my parents when they stopped smoking, and though they still miss it, they haven't smoked for about 6-7 years now. The good thing about this is that the chewing action is very similar to tobacco chewing anyway.
The trick is to use the gum as prescribed and also, to have a lot of gum around and take one every time you want to chew tobacco.
This is what worked for my husband - understanding that he uses cigarettes as a way to avoid feelings. He would smoke when feeling anxious or vulnerable or when stressing out in front of new people. Once he accepted those feelings, the craving for a smoke subsided within 3-4 days, the craving for not feeling vulnerable became a different thing all together, which he deal with in other, healthier ways now.
