I spent many years in archery competition, and hunting. Also many years shooting IHMSA and making revolvers shoot like rifles. I hunt only with bows and revolvers. 

I also use round ball muzzle loaders and used to build them.

Deer hunting regulations

If I remember, you need to be 25 yards off the road. I don't remember anything about how close to cows, etc you can hunt, only houses.

I have never seen yellow fat in a deer. There might be something in their diet causing it. Some hogs in Fla will have yellow fat from a root they eat.

All laws should apply, same as beef or pork. Usually deer can not be processed in the same place as beef or pork so if you just do deer it should be easier. Check with your state.
