It's true, if you got used to use the menus with alt-F and so on you'll have to adjust, but you don't have to use your mouse to do everything .

It's impossible to get the classic look in Office 2007. But as drabsv said, most users find the ribbon interface very convenient once they get used to it.

About 5 years, assuming you have Windows XP now. Microsoft will support WinXP and supply security patches for it until 2012, IIRC. Actually they often keep supporting operation systems for more than 5 ...

I'm not aware of a way to do it in Acrobat reader, but there are other pdf readers in the market, I'd check if it's possible to do it in them.
