For only a dozen muffins,I would use a hefty teaspoon,and dont worry about baking powder,go ahead and use it ( i dont know what it does )but what someone else brought up,dont use mixer,just beat it ...

You could always add baking soda to the mixture. It does wonders in a lot of things and it doesnt lose its strength. No expiration date.
